If your role is in a science, engineering, or mathematics topic area, you'll definitely need to use LaTeX.
LaTeX seems intimidating but it is very easy to pick up.
A good place to start is the website codecogs which allows you to drag and drop symbols from a menu. You will insert the LaTeX code produced by that tool into the Mathjax envelope in CMS 8 (as explained in the FAQ page).
